Usually, the page where the on/off-peak prices are listed will define what they mean. For example,

If the price page says On- or Off-Peak TIMES, that usually means Friday/Saturday/Sunday sessions, year-round.

If the price page says On- or Off-Peak SEASON, that usually means December and January, when most people think of going ice skating.

Check the rink's site and if it doesn't define the sessions, contact the rink to ask. Double-check to see if the session you want to attend is still on the schedule. Sometimes, the schedule will change and you don't want to make the trip only to find it's been cancelled.

Have fun!
